Pare and boil quickly; when done, turn into a colander.
Mash them and dress with cream, butter, pepper and salt, pat them out into cakes and bake them.

A good way is to put in the yelks of two or three eggs, and boiled codfish picked up fine, made into balls with the potato, buttered and baked.
