Heat oil in large skillet over medium-high heat. Add chicken breasts. Cook 3 to 4 minutes on each side or until lightly browned. Remove from skillet, set aside.
Add onion and bell pepper to skillet. Cook and stir 5 minutes or until vegetables are tender.
Add chicken broth and Coca-Cola to skillet, scraping up any browned bits from bottom of pan.
Add tomatoes, tomato paste, hot pepper sauce, white pepper and bay leaf. Cook and stir 8 minutes or until sauce thickens slightly.
Return chicken to pan and simmer, uncovered, about 15 minutes until chicken is no longer pink in center.
Arrange chicken breasts on serving platter. Remove bay leaf from sauce.
Pour sauce over chicken and garnish with parsley. Serve over rice.
