A traditional method for making rich, clear coffee using egg whites and shells as a clarifying agent. The egg white and shell help settle the grounds and reduce bitterness, creating an excellent after-dinner coffee. This technique was popular before modern coffee makers and produces a smooth, full-bodied brew. An alternative method using cheesecloth is provided for those who prefer not to use eggs.
Step 1: Mix the coffee with 3/4 cup cold water, the white of egg and shell.
Step 2: Add boiling water and boil 8 minutes.
Step 3: Pour out 1 cup of coffee, and return to the coffee pot.
Step 4: Add 1/2 cup cold water and let settle 5 minutes.

Alternative method: The egg may be omitted and the coffee grounds tied in a small piece of cheesecloth and removed from the coffee pot after the coffee has been boiled 8 minutes.
